You can see an extensive list of honkyoku at www.komuso.com. Click on
"schools" and you'll see lists organized by school, sect, or temple. (List
members: this is still a work in progress, and I know the web master would
really appreciate suggestion on how to improve this site, so please send
him your email.)
When you click on a name of a honkyoku, it takes you to a list of
recordings of that particular piece. Although not yet exhaustive, it's very
handy!
As to what constitutes "essential honkyoku", I can't say. But it may be
that this is a redundancy, since being "essential" is a characteristic of
all honkyoku, especially when played by masters of the "essential", such as
Yokoyama Katsuya, Tajima Tadashi, Watazumi, Riley Lee, and many many others.
